Thanksgiving Hot Pockets

It’s time to get stuffed like a turkey! Here’s an easy and DELICIOUS way to use up leftovers….


  • Stuffing
  • Cranberry sauce
  • Mayo
  • Pizza Dough, or Focaccia dough. Croissant dough if you are SUPER fancy.
  • Sliced turkey

Preheat oven to 425°F with pizza stone on the top rack.

I used Stovetop stuffing b/c it’s pretty unbeatable and you can doll it up by adding in fresh fruit or veggies. I added sliced apple and Craisins because A) it’s yummy and B) my mom did this.


Now mix cranberry sauce with mayo. I used whole berry cranberry sauce here.


Roll out the pizza dough on a floured work surface. Add plenty of flour to prevent the dough from sticking and roll out until thin, but not transparent. Cut into squares and start making your hot pockets!

First add stuffing.


Drizzle with cranberry mayo sauce.


Top with one slice of turkey.


Then fold one edge over to the other, stretching as necessary to bind the two together. Seal the edges by pressing down with your fingers. Roll into flour and a sprinkle of corn meal to prevent sticking. Place on pizza stone and bake for 10-15 minutes or until golden brown and bubbly.

A little sauce might ooze out, don’t worry. That just means your hot pockets are going to be extra fabulous!

Slice up and serve with a side of cranberry mayo or if you want, gravy !
